So I was making muffins for my class for EQAO, and I took them out of the oven, and they are sort of flat... My class is counting on me to bring them... so I was wondering if there are any good answers for me?!?! I need to know by tomorrow! Thanks!
Yes, there is something you can do with them. Beat up a nice stiff meringue and add sugar. Crumble the baked muffins into the meringue. Use a portion scoop to make nice little domes on a Silpat or parchment. Rebake briefly.just until set. You can even drizzle with a little roll icing.
