Can I Make This Cake In Advance...

ASo I have a major problem. I am making this cross cake for a client to be picked up Saturday morning. I babysit every Friday from 8:00 to 1:30 and know that I need a lot of time for the cake. I run out of my house so I only have one sheet cake pan. Is it possible to make the cakes on Thursday. Will they stay fresh until Saturday??? Any tips to keep them fresh???

were you going to show pic of cake. Is it fondant covered, is it b/c covered, etc. let us know. thanks

AOops forgot the picture. And I only want to make the cake Thursday night and decorate on Friday evening. I am doing this off your phone and I don't know if it is letting me put the pictures on...

If you are asking about baking ahead of time, I routinely bake and freeze cakes until needed.  I am a hobby baker, but have more than a full time job.  It is the only way I can get things done.  I've read many posts by others that do the same.  Some think it also makes cakes more moist.  I don't think it detracts from them (at least the recipes I use) one bit.  And I freeze just about everything - cakes, fillings, frostings, cookies.  Out of necessity, but also because it works well.   HTH

AIf it's only out for a day do I freeze the cakes??

If it is only a day, it should be fine to wrap them tightly so they don't dry out, and keep in a cool place until assembled.

AFor my cakes that are due on Saturday, I usually bake them Thursday and as yortma suggested, wrap them so they'll stay moist. Then I decorate them Friday night. I think your cake will be fine. :)
