Uncooked Layer In Cake

Hi.

 

Im having trouble with some recipes that i have not cooking all the way through.

 

Theres an uncooked layer through the middle of the cake, all in the cake itself. 

 

The Bottom 1/4 is cooked, middle 2/4 is not cooked and the top 1/4 is cooked - see picture.

 

Recipe is as follows:

  • 6oz soft marg
  • 8oz SR flour
  • 1 and 1/2 tsp baking powder
  • 6z caster sugar
  • 3 eggs
  • 3 tbsp milk
  • 3 tbsp cocoa mixed with 3tbsp of water

 

Cooked @ 180c for 35 mins in a fan assisted oven in a 12" x 9" tin about 1 cm deep

 

 

Theres 3 different variations of the same recipe - all fail. My neighbour makes the same cake and its perfect.

 

Any ideas?

 

Oven isnt opened whilst cooking, have a friend coming out to check my over but i cant think else it could be.

You are talking about a convection oven I take it?  I believe there are some adjustments for the temps and times. Try googling this info to get the info.

 

 Also you can grease a flower nail all over and place it in the middle.  It will act as a heating core.  I do it too mine all the time, especially because I generally use tall pans.  If you have larger cakes use more than 1 nail.
