I made a cake for my niece's communion. It's a 2 tier choco cake filled with whipped cream and fresh strawberries covered in ganache and fondant.  How long can the cake stay out for.  I like when cakes come to room temperature, but 1st time for strawberries and cream.  I need to know what time I should tell the restaurant to take the cake out.  The start of the party or earlier.  The party is today and I am going to drop the cake off in a little while.

Sources recommend whipped cream be refridgerated after 2 hours, so I would think you could take it out about half an hour before the party and put it back in the fridge within the two hour time frame.  HTH
