Lactose Intolerent Client

good Morning,

 I am baking cupcakes for an event and one of the requests is to have a lactose free cupcake.  The cake doesn't concern me to much, I'm thinking of an angel food cupcake. The delima comes in with the frosting.  What do you all think of pairing the angel food with a marshmallow frosting, garnished with fruit?  I'm open to any and all ideas!!!

Seven minute frosting has egg white, sugar, corn syrup, water , flavour.

 

Coconut milk from a  tin has no milk, no lactose.  That can be used in place of milk/cream in "creamed" icings and custard fillings. 

 

Make sure you buy  certified vegan or certified dairy free margarine. 

 

Many chocolate cake recipes use coffee NOT milk, and oil.  These recipes use cocoa, or unsweetened chocolate, to avoid traces of milk in chocolate.

 

Best to do a google search for "dairy-free cake" you will see just how many recipes you can bake.

I think a marshmallow frosting would be great. Depending on what kind of frosting you make, you could use margarine instead of butter. If you do a search for vegan frosting they don't have any milk in them. I use almond milk instead of regular milk.
