AI'm curious what kinds of cookies can we decorate on?
I'm trying to figure out what they use here http://www.mezeskalacsajandekok.hu/ if its a cookie at all, lol.
I believe they are ginger cookies, although the designs could be piped on other kinds (e.g., sugar cookies). The white piping shows nicely on the gingerbread color. I would suppose you could pipe on any flat cookie.
Yep, you can decorate any flat cookie. Using chocolate can yield a stunning cookie because of the dark background color.

Sugar cookies of course, gingerbread cookies (Williams Sonoma recipe is awesome) and rolled chocolate cookies. Any rolled cookie that holds its shape. If you have a rolled cookie recipe that spreads too much, try it with decreased leavening. Also, try recutting the cookies with the same cutter immediately after removing from the oven when still hot and soft.

I tested and combined several sugar cookie recipes until I got one that suited my taste and Greece's climate. It took weeks and many tries but I love my sugar cookies. They are so perfect for decorating either with royal icing or with sugar paste and the best part is they last. I keep the left overs from a batch that don't get used in the frig up to 3 weeks and they are perfect. You can't do that with every cookie. They can't be overcooked,that is important. You can add different flavors to give it a different twist to a normal sugar cookie. Good luck!
That is a soft gingerbread kind of cookie. They are lovely.
One of the tabs on that website actually has the recipe. I think it is Hungarian. I could only get a little of it translated. However, you'll know you are there when you see the picture of the ingredients.
coppergifts.com has great cookie cutters. They will make custom cutters any shape or size as well. Very reasonably priced, and fast
