Recently I have been buying fresh eggs from an egg ranch near my home. Most of the large eggs have  double yolk in them. Would you count these as 2 eggs in your recipe or just 1 egg with a bonus yolk?

Weigh a couple out. A large yolk is .75 oz.

I think you'll find that they are two smaller yolks inside one egg shell. Since the egg is sized ( lg, jumbo, etc...) the contents are still the same size regardless of the number of yolks inside it.
