In a couple of weeks I will be delivering a cheese cake as the grooms cake.  I just had a panic, How long can this cake be left out of the cooler?  Anyone, help!  I will probably set up the brides cakes 2 hours before the reception.  Maybe I should freeze the cheese cake?  I'm in a quandary.. someone help!!

ACan you not ask the venue to keep the cheesecake refrigerated until the dessert course?

Just discussing that possibility..The cake wouldn't be seen anyways there is a large sculpture (mountain and Jeep) over the top.  I wouldn't worry serving here in home but events are out of my control, may be hot in there. I don't want any problems thanks for the response
