I have been trying to figure out the amount for this recipe, but cannot seem to find an answer.  I need to fill and cover  6,8,10, and 12 inch cakes for a wedding and I don't know how much hi ratio shortening to get.  Does anyone have any insight?  Thank you all so much!

It's 2 1/2 pounds of high ratio shortening per batch, which fills a 5 quart mixing bowl. So maybe you can try to figure out how much you normally make for each size cake and guesstimate on the bigger tiers.

 

I'm sorry I don't have a better answer for you but when I need a lot of buttercream for a couple days in a row I just make batch after batch and fill a big food-safe container. If I'm running low, I just make more. I always say I'm going to keep track of how much I use for each size cake but I unfortunately haven't nailed it down yet.
