How Far In Advance Can You Make Strawberry Filling?

AI have to much baking to do next week. I'm making strawberry and raspberry filling. I will fill the cakes on Thursday morning and will start baking on Monday. I will freeze cakes until Thursday ( for 2 or 3 days) how about filling? Thank you

you can freeze filling by itself for months

 

if the cakes are already filled with it you wanna make sure the water content in the filling thaws well

 

so do an over night test and check how it does after a cake slice is fully thawed--should be fine

 

but if i was making the fruit filling for a cake a few days in advance of assembling the layers i'd just fridge it

 

then fill the cakes

 

then i almost always freeze my filled cakes for a coupla days--then final coat after that

 

no worries
