Looking forward to setting up my in home bakery.  I am currently just hobby baking and have alot of work to do in the next year. The room is very functional now with 3 bay sink, oven, refrigerator, oven, dry storage area, two six foot stainless steel work surfaces, glass desk for gum paste work, wooden desk for computer, two 3X6, 5 selves cooling racks,  My dear husband is willing to redo my "cake room" for me.  It is located in the basement with 1 large window.  We will be installing a new drop ceiling.  What do you prefer for lights?  My main concern would be lights over the 3 bay sink, lights over the two six foot stainless steel work areas, and the area for pictures?  I plan on installing pull down blinds in different colors in the photo area.  Thanks for your help!!

Personally I would go with the higher end fluorescent bulbs that are red spectrum.  I hate the cheap fluorescent bulbs and they strain my eyes and I end up going outside for good lighting to mix my colors anyway.

 

I have in my plant room red spectrum bulbs that fit into regular shop lights and I grow a shelf of basil, parsley, rosemary etc through the winter.  The light is nice and it doesn't strain my eyes at all.

 

You may want to have a small Ott light where you can turn it on and check mixed colors so you don't have to haul anything outside.  :)  You can buy small ones that fold up at the fabric and craft stores, I have one that I use with my sewing machine and I can easily take into the kitchen when I'm mixing complex colors.

Daylight and fluorescent lighting causes colors to quickly fade (pink will fade to white, and the pink/red in purple will fade to blue).  I'd research the many LEDs that are available to see which may not have UV properties.
