Hi,  I would like to get a simple recipe for pineapple upside down cup cakes.  I have a pan designed for them but I am not sure how to prepare the batter and the pineapple.  I would greatly appreciate any help.  Thank you. J

The cake batter is the same as any yellow cake batter.

 

Put some butter on the bottom of the pan(s), sprinkle with brown sugar, add drained canned pineapple rings, cherry in the middle if you like.  Then gently add the cake batter. Normally use the amount of batter that will make a cake about 1.25" deep because this is not  normally sandwiched, only turned out to show the fruit.

 

Baking time will depend on how thick your cake batter is.  About the same time and temperature as a regular cake layer.
