I'm going to make a wedding cake for 70 in mid August. The couple wished for a brownie cake with fresh raspberries, covered in ganache and decorated with fresh berries. But now I have some questions.

Is it safe to use fresh berries in the cake, won't they spoil too easily (e.g if it's really hot)? Is ganache usable in summer or will it melt too quickly? Can I decorate with fresh berries?

*oh so worried...

Is it an indoor or outside wedding?

It's an indoor event

then you should not have any problems... logically I would decorate the cake with the berries at the venue and not transport it with the berries... but I have never done a wedding cake before so I am just thinking out loud...
