AHello. Some of you might allready know that I love the traditional wedding cakes. A lot of the times when I am looking at traditional cakes at the internet I see a lot of the sort of same wedding cake pictures in the style that I love. But I also noteced that a lot bakerys use these cakes as exemples in their book or at their site. Even a local bakery here in The Netherlands uses these as example(which is about the only bakery here in NL that does this style).
But my question is if somebody from you bakers ever replicated cales like these?

AI have, and I really enjoy making them, but I don't think they are as pretty as modern ones.
If you show pictures of such cakes to customers, you will get some orders.
When I made cakes for sale, these were the style that most people chose. Usually they had royal icing flowers in clusters at the tops of the swag borders.
These cakes are easy to make once you have all the hardware. I found piping the borders to be relaxing. I used the same medium consistency buttercream for icing and piping. If you are using the "crusting" buttercream recipe from Cake Central, then more liquid needs to be added.
And these cakes with more up-to-date toppers should sell very well...look at the Wilton yearbooks and wedding cake books from the 1990's for sample images.
I couldn't find any bakery doing those cakes in Holland 11 years ago, it was hard enough to find a traditional wedding dress! I ended up getting married in England, where these cakes are more common.

Yes I made all 3. I used to have a ton of pictures from way back when, but it seems not a lot of people are ordering these anymore. Now it's all fondant, which by the way I don't work with. Nor buttercream. All I use is Pastry Pride which is a non dairy whipped topping.
This was my wedding cake, you'd think it was from the 80s going by how much things have changed, not 2002!

AI use to make cakes like these, feel free to look at my pictures. Every now and then I get to mix the old style with the new. I just love making these types of wedding cakes. WOW memories! Oh, yeah I read in an wedding article just the other week, these cakes are making a come back, be patient, practice your piping technique and be ready. Best Wishes!
How did you manage to keep it from falling off the stand, sideways like that?
I like the old style also made with butter cream instead of fondant!!! I guess the only thing that matters is what the bride or customers prefer.

AAlways when I show a bride here in NL how the old school cakes look they are very suprised cause for them its a new style that they have never seen before
