Can anyone shed some light on all the "velvet" recipes? I have seen numerous recipes for pink velvet. All are different. Have also seen blue, green and black velvet cakes. Is it just food coloring? Or is it certain ingredients and a specific taste that comes through? I am in Georgia so I do know red velvet as it is very popular here in the South.

Yep, they are just using different colors in place of red.
