AI would like use Marzipan as a fondant to decorate cookies. Do you think it would work?

You can certainly use it.  But you will have to warn customers about the presence of nuts.

Sure it would work.  You can actually mix marzipan with fondant for a lighter color (it tends to be more on the yellow side).  But like Irene said, make sure they know about it.
