Okay, So like soooooo many people you have fallen victim to Duncan Hines' changes to their mix (no maltodextrin -not sure if this is what changed everything, but everything definitely changed, and the amounts of the ingredients have changed) and the amount given...and now I NEED a (desperately) moist, fluffy, yet firm enough for a wedding cake/stacking cake.... Oh and has a wonderful taste! Duncan Hines Moist Deluxe Butter golden mix makes a really good cake..um..MADE a really good cake. I have tried 4 or 5 different yellow recipes and now, my friends/ family are complaining about dryness and/or heaviness of these homemade cakes. Does anyone have a recipe that rivals my FAVORITE cake mix cake??
Hi, a lot of decorators on this site use this cake from beyond buttercream(jennifer. a c/cer)blog. Google this and you will see her white and butter recipes. hth
Thank you...but I can't seem to fine the butter recipe on her site :(
Hey thanks for the rec! Here's the link;
I've just made this one:
Here you go:
This has a bajillion awesome reviews on various discussion forums on the web. I haven't tried it in a cake form. It does NOT translate well to cupcakes. but you can see by the crumb how open and fluffy it is. Not my preference, personally, but if you're going for something that mimics a box mix, it definitely fits the bill.
The Vanilla Butter Cake from the Mermaid Bakery makes a very light cake; you can find the recipe in the recipes section. I have made it several times and it is an excellent and light cake. From Scratch's cake recipe is also excellent!
@ Annie: Thanks I've tried this one, but I don't think it's firm enough for my tiered cakes.
No problem. I liked the tips that were added throughout the recipe. I had to cook it for much longer than the stated time, but I did a thicker layer, so just see how you go.
I only tried it as cupcakes, and it sucked. Glad to know it's not that great for cakes either. I like a denser, tighter, crumb, and after seeing the pictures I decided not to try it as a cake.
Thanks all! I FINALLY have my scatch cake recipes!! Thank you!
AReally interested to know what recipe that works. Can you please share? Thanks
Ahoneyburn1 which recipe did you use please would like to know
I have always used the wasc until recently, I decided to try beyond buttercreams recipie, now that's all I use. It is beyond amazing. My husband who grew up on box mixes now will only eat this cake. I just made the pumpkin and everyone raved about it. I am now a scratch only baker. Her recipie is easy to follow and the end result is great.
Yes please let us know which recipe you liked. Thanks.
AMy favorite recipe is the White Velvet cake from the cake bible
Acrustdust, The white velvet is my favorite also. I get so many compliments on it.
I also have been trying different recipes. My customers and my husband love my cakes...and they are from a box. Have tried different scratch recipes and none have equaled the moistness of the box mix. Plus, needs to be able to be frozen and maintain moisture as I only have 1x a week to bake. I also like a more dense cake with small crumb. I don't want the airy or wholes between. Anyhow, tried FromScratch (Beyond Buttercream) and loved it out of the oven. Tried freezing a small cake to see how it fared the next day. Well, not so good. Didn't tell husband and he says why is this cake dry? So, can you tell me does the White Velvet cake (cake bible) freeze well?
Yes the white velvet from the Cake Bible freezes well. I have to try FromScratch's recipe.
AWhere can I find this white velvet cake recipe from scratch?
