Does Marshmallow Fondant need to be refrigerated? If not what is it's shelf life?

 I wanted to make extra to use in molding later but was unsure.

my girlfriend used to freeze it by the batch regularly

 

then she switched to store bought

I do not refrigerate my MMF (but you certainly can, if you like).  I keep mine wrapped in cling plastic, inside a zip-lock bag, and then inside an air-tight container in the pantry.  If I haven't used it within a month, I throw it out.  

 

I'd love to hear what other people think!

Keeps for a pretty long time if airtight, like metria says above!  It's really just icing sugar and marshmallows, not much to go "off" in there.  I find it still gets dried out, but re-warming and kneading seem to fix.

I made MMF for a cake in December and kept the extra. I didn't have any unused large Tupperware containers so I covered it in shortening and wrapped it in about seven layers of saran wrap. Four weeks later it had started to dry out around the edges so instead of throwing it out I used it to cover a dummy cake. Moral of the story, you can save it, but make sure you use an air tight container!
