AHow long does it take you to make a cake I do not want a dry cake ! Can you make my cake the same day so it is fresh? Sure I can make you're three tier cake the same day no problem. NOT!!!! O.o

I always get stuck when asked this question, what do you all say when asked?

APrep.

Day 1. Make all gum paste decor. Day 2. Make all batters freeze,make all fondant put aside, mix base butter cream fridge or freeze. Day 3. Bake all cakes wrap like crazy and freeze. Day 4. Crumb coat,level tort ect ect Day 5. Decorate viola!

i would repeat what she said, "so it is fresh?" and raise my eyebrows like whaaaat?

 

i'd give her a chance to hopefully realize what she is saying

 

then i would say, "you are ordering a cake that you think will be stale?"

 

people don't ask me that though

 

it's a presence thing

 

if chicklette didn't get a clue and back off i would not work with her

I might say something like " If I sold dry cake I wouldn't be in business very long.   I schedule my baking to assure the freshest cake possible.  If you wish to order I will be happy to help you.'   And leave it at that.    I actually prefer to freeze my cakes a couple of days before they're due.  The texture seems to be better and I like working with a cold cake.

Haha mite give that a try! I've been asked this question twice sense I started baking in 08".

This ^^^!  Very well said. 

Actually cakes taste much better at least the next day if not 2 days after baking (as long as it has been either well wrapped or iced).

I ask the customer, if they ever had a problem/bad cake from some other baker.

 

Then I tell them that there are good ways to keep a cake very tender and fresh.  I also tell them that a tiered cake MUST be baked long enough ahead of time to get it cold enough so that the icing doesn't fall off.

 

Finally, you can offer to the customer to add a sprinkle of flavoured syrup onto the cakes to make sure they will not be "dry".
