I need to make a 3 D cake of a deerhead standing, i figure i would do the nose and antlers out of foundant, how do I form the actual cake, the art of it I can do once I have the cake formed.

I haven't made a deer cake, but have you checked through some of the cakes here on CC. Do a search for deer head cake or deer cakes. Once you find one, maybe you could pm that person for some guidance. Also, try Google a deer cake tutorial or instruction. This is a good time of year for it.
Like I said, I haven't done a deer cake but I would stack, ice and carve and make sure you have support for the antlers. You might experiment using rice krispie treat for the antlers. Not as heavy as fondant but you will need time for them to dry. If you go with fondant, add 50% gum paste. It will hold it shape better.

I would make the antlers out of a heavy gauge wire and cover them with a really hard royal icing. This would provide a good base for gum paste. Here is a link which should really help you, plus it has two very good recipes for you to use.
I've used wire for deer antlers, but they were very small figures for my cake, not the scope you've decided upon.
