I will be selling my decorated iced biscuits on Thursday and I'm making some batches now.
I want to ice them and have them already decorated by Thursday so would it be ok to freeze them and let them thaw Wednesday night so they're ready to go Thursday morning?
The recipe for royal icing I'll be using uses egg whites.
Your royal icing decorations have to be DRY before you freeze your biscuits/cookies. Otherwise they will be a royal mess...
For storage from Monday to Thursday, I would put the finished biscuits/cookies into boxes or tins on a cold place like my basement (sits at 10C) but not the freezer or the fridge.

Can you store the royal icing mixture in the fridge overnight, warpped in cligfilm, tightly pressed to avoid crusting?
I keep leftover royal icing in the fridge in airtight plastic containers for up to 3 days. Press the film on top to slow down crusting. Scrape off the top when you are ready to decorate.
Once I tried a damp paper towel to keep the top humidified, would not do that again.
