Since name brand fondants are quite expensive in Mexico, I decided to make my fondant for my bussiness, following the Wilton recipe, which has been working wonderful for me.
I think I have made over three tons of Fondant in three years. However, once in a while I end up with a fondant that does not strech. even when I just finish making it with the same exact recipe.
Today was one of those days. First the mixture could not take all the sugar, as ussual. It turned so hard, too soon. Then I added a litlle bit of Corn Syrup and after hours of exhausting labor, finnaly it soften enough but never streched. When I placed on the 5 tier wedding cake the edges started to crack.
I hope someone can help me with this mistery
creo qe es por la humedad, estuvo muy bien lo del corn syrup pero trata de dejar una taza de confectionary sugar y ya dependiendo de como lo ¨sientas¨ se la vas agregando poco a poco ya paras donde veas qe ya se siente ¨manejable¨ , no soy experta pero espero te sirva mi tip
he leido qe por la humedad puede ser qe necesites menos azucar de lo qe dicen las recetas, y creo qe vives en Cancun , por eso me imagino qe pueda ser eso.. a veces dicen qe se puede partir por no integrar bien los ingredientes pero creo qe no fue el caso, es raro qe el clima influya en las recetas pero pasa

Como todo lo hice igual, menos la glucosa, tengo una poca de la anterior voy a hacer dos batches al mismo tiempo uno con una y el otro con la otra por que es lo único diferente despues de muchos kilos. Creo que cuando encuentre el motivo lo voy a publicar. Saludos
