I have attached this as a pdf because I included a table and many variations.

 

I'm sorry I didn't post earlier--my day job got very involved.

 

I would recommend this recipe for people who would like to start baking from scratch.  Mix a half batch BY HAND.  This is a very forgiving recipe but please do NOT substitute the flour--the explanation is there.

 

Anybody who needs a GF fruitcake need to borrow or buy Annalise Roberts recipe book of gluten free baking.
