Hi! I want to know, about the cream cheese icing. Which is the best for filling cakes? Because this type of icing is really soft and when I stack a cake (my last one was a 4 inch little cake) and the layer want to run ! I don't know how make baker when they stack a wedding cake??? :O

One easy way to use cream cheese frosting without having to worry about how soft it is, is to use it as a filling rather than the frosting itself. What I mean is pipe a dam around each layer of cake in regular buttercream and then use the cream cheese frosting as the filling inside of the dam of buttercream. I hope that helps :)

hi, read this thread and scroll down to where there is a recipe by carmijok. I have always made c/c icing using butter also. but her ratio's make it more stable and it is delicious. and ices great. hth
