AIf you do a search online you will find several well-reviewed recipes for gluten-free cake...most of these recipes are pretty good, but if you want to get from good to great you will need to do some experimenting on your own. It took us months to create our own gluten-free recipes, and we ended up using a mix of rice flour, sorghum flour, tapioca starch, and xanthan gum.
Most icing should already be gluten-free. For both the icing and the cake you should contact the manufacturers of your ingredients to ensure they protect against cross-contamination, and if you also use gluten in your kitchen set up your baking and storage processes so you don't contaminate gluten-free products or ingredients.
