Help...not sure whether or not to store fondant decorated cakes in refrigerator.  When I have completed my cake, I store the cake in the refrigerator, but when its time to take it out, the fondant starts sweating as it comes to room temperature...What is the correct method for storing decorated fondant cakes.  thank you.

I store 100% of my cakes in the fridge, including all my fondant covered cakes.  Yes, the cake will form condensation on it when it is first removed from the fridge, but it will dry.  I have never had the colors run, bleed, smear...Just don't touch the fondant until it is 100% dry or you will leave finger marks.

I also use a fan to speed up the drying process.
