I was wondering if you can flavor ganache using extracts, such as Lorann's? And, if so, what amount woudl you use, say in a 3:1 ratio using white chocolate? My mother is not a fan of chocolate and I was thinking of adding some vanilla or another flavor and trying ganache for the first time.

as long as the lorann oil says okay with chocolates (theres a list on the site and in the catalogs) then its fine
Premix the LorAnn flavour with the cream if you have any doubts. In my experience they all mix well with heavy cream.
In addition to the candy flavours, you can try their fountain flavours as they are formulated to be mixed with syrup as well as batters and icings. They don't need cooking, and they are as intense and clean flavoured as the candy flavourings.
Amounts? I have the dropper tops on my LorAnn bottles and so I add 5 drops at a time. The different flavours taste different after mixing with the foods so it's hard to say how much you want to use.
