Pleeeese HELP

 

I sold a cake to customer and she called me to say there was mold on the bottom of the sponge (madeira) :( 

I was mortified :(

Does anyone know why?

The cake was only a week old? so that wasnt the reason. x

There was mold on the bottom the day she bought it or a week later since you say the cake was a week old?

 

If it was after she had it for a week, (and I don't know much about a madeira cake) I would presume that it was due to improper storage on her part... not on mine...

 

If you had it for a week before you sold it to her (and again, I dont know much about madeira cakes) I would presume that it was due to something you did...

 

As for why mold... It happens to many things exposed to the air...

This ^^^^ sums it up. 

 

Environmental conditions can be such that mold will appear in a day.  Week old cake, no matter who's "week" it was, could very easily develop mold.

AThank you, that's really helpful. I remembered that I had basted the cake in sugar water, I'm thinking maybe I didn't allow the cake to dry before covering. X thank you for your input
