I have a rush order for a 1/2 sheet cake filled with bavarian cream and strawberries. The icing is van. butter cream. Since the cake must be refrigerated, (because of the filling) will my fondant figure and decorations hold up? Please help, since I have no clue and need this made by Friday, Oct. 26th. Thank you in advance. icon_cry.gif

I am by no means an expert....but....as far as I know you cannot put fondant in a fridge as it sweats and becomes tacky. And unfortunately I cant think of an alternative...Good luck!!

Not sure what fondant you are using. I use MMF and I refrigerate my cakes all the time. Never had a problem.

I agree some fondant can be refrigerated just fine. Will the cake be boxed? That would help too. thumbs_up.gif What kind did you use?

If you box the cake then put that into a plastic bag or wrap w/plastic cling film - 2 layers - it will be fine. Just leave it wrapped up for several hours until it comes to room temp before removing the plastic.
