I am doing a wedding cake this weekend, the bottom tier is going to be chocolate mud cake with chocolate ganache.
The second tier is going to be caramel mud cake and i'm not sure what flavour ganache I should use?
Should I just use regular chocolate ganache?
All the recipes I have found for caramel ganache say they are not suitable under fondant.
You can use white chocolate ganache or caramel ganache. Yes, even under fondant!
I use salted caramel ganache , but have used dark chocolate as well.
