Making A Stand-Up Rainbow On Top Of A Cake

Curious what you guys would use for it.
I'm going to be sticking it on top of an 8-inch, 6 layer rainbow-style cake frosted in American buttercream.
I sort of want the birthday girl to be able to eat it. Can you eat modeling chocolate after it sets up? Also, would I need the oil/candy colors to color the modeling chocolate?
I've used gumpaste, fondant, and a 50/50 mix before and am comfortable with both. But I've never used modeling chocolate (seems pretty simple though)
I have until Saturday to make it. But I haven't actually made the cake yet, so I'm probably going to bake all the layers on Friday.

Yes, you can use modeling chocolate. I just color mine with regular americolor colors. And yes, it will taste so much better. Make it ahead of time , turn small fan on it and it will help to dry. hth watch this video. I took her demo at Ices this year. She is great. I have been using that recipe, but she shows so good how to make it and mix it really good.so that it is sturdy, etc.
