I've been asked to do a wedding cake in just a few weeks (they're lucky that they're family lol) and am needing a recipe for Chocolate, Pumpkin, and Carrot Cake that will withstand carving. They've asked me to make a "stump" cake that has three layers, and I'm doing fondant so I'm just wondering if anyone has recipe suggestions for this. Thanks!!

Check out the "recipes" section on Cake Central.

To carve a cake well, CHILL it overnight. In your case, after you stack the layers and give them a crumb coat of buttercream.

So I should go ahead and stack and crumb coat them before I start carving? Just so I'm clear. I've only ever done a very "rough" topsy turvy, and my mom actually did most of it as I was technically supposed to be on bed rest.

I figured you were going to bake one layer of each, stack, and then carve.

How many cakes are you stacking? thee 2 inch layers is OK but for more, you need dowels and cardboard at every 4" height.

So you fill the part to be carved. I add the lightest crumb coat to keep it moist in the fridge. Then chill overnight and carve away with ease.

After the carving, you will need to follow your normal procedure starting with the real crumb coat.

I just tested a recipe that I found here. It's titled Durable Cake for 3D and Wedding Cake. It is posted by heartsfire. I used a yellow cake mix and instant pumpkin flavored pudding. The cake and pudding mix can be any flavors that you need them to be. I am making a wedding cake this weekend. I tested this cake on my family. They loved it. Fortunately they are brutally honest. If it wasn't any good they would have said so. It is dense but moist. This is going to be my turn to cake.
