I always put my regular fondant cakes in the fridge over night and take out about a hour before delivery to let the sweat dry out.

My question is can i do the same with chocolate fondant? I know water causes problems with chocolate.

I've never had a problem. I know most people don't recommend putting fondant cakes in the fridge, but like you, I always do, and have never had a problem.
