I have a wedding cake for Saturday which is red velvet and I am not sure when
Is best to start baking? I was thinking of starting today baking the 8 in and 10 in and doing the 12 in tomorrow. Is that a good thing to do?

i always bake on the monday before the weekend order. i freeze them, thaw them on thursday & crumbcoat then decorate on friday. always very moist!
