I know there has been discussion on this, but I really need an informed opinion by someone who has done this. I have just completed icing a cake and have used cream cheese icing. I am covering it shortly in fondant (cake is due tomorrow) can I put a fondant covered cake in the fridge? what about condensation when I take it out?

I put fondant cakes in the fridge every week. You can expect some condensation when it comes out. Let it sit for an hour and it should dry out. Don't touch it while the condensation is there. When I have something that I really worry about running (black decos on a white white cake) I will put a trash bag over the cake and tape the opening to the cake board (think of it as making a ghost costume for your cake). This minimizes the condensation greatly.

What she said. A million times over I repeat don't touch it until the condensation dries up. All of my cakes are fondant and all of my cakes go in the fridge. Since this us my hobby it can take me several days to complete a cake. The fridge is my friend.

Got one in the fridge right now. When it comes out it will get sticky but won't be so wet that it drips. Regarding the trash bag comment, how do you keep the trash bag off of the fondant? Anything touching the fondant will make a mark. Just wondering.

I was recently told by a Baker friend if you out the cake in a cake box and totally seal it, ie stick tape the sides, it keeps fine, the coolness of the fridge is attracted to the cardboard.

I put the bag on while the cake while the fondant is dry and then billow it out a little so it's not all right up against the cake. When I take it out of the fridge I take the bag right off. It has never left any marks on the fondant that I have noticed. I will admit that I have only used the bag trick maybe a dozen times; it's not something I do regularly. I learned the bag trick from one of Mike McCarey's classes - he said he does it all the time.

I've always observed the conventional wisdom of not refrigerating fondant covered cakes...until several of my brides insisted on freezing their top tiers and swearing that when they pulled them out of the freezer a year later the cake looked and tasted great! Keeping it well sealed in the refrigerator/freezer is the "secret". I am now a convert
