Hi,
Does anyone have a simple recipe for a basic cake or cupcake mixture, please? I am hoping to do some cupcakes as gifts for Christmas and can't find anything with less than a gazillion ingredients. icon_wink.gif
Would very much appreciate any recipes ideas that anyone has.

These "gazillion" ingredients are necessary: rice flour, potato flour, tapioca flour. You will not have cake if you don't use them. Many brands of baking powder contain gluten so you have to use baking soda and cream of tartar.

Look online using google--there are so many gluten free recipes. You can look for a premixed gluten free cake flour to avoid having to buy separate flours and mixing them.

You can even look for gluten free cake mixes that only require eggs and liquid to be added at home.

I am strictly a GF Baker & Decorator. And I totally agree with BakingIrene. The only way to avoid buying a "gazillion" ingredients is to purchase a ready made mix. But be careful when adding the rest of the ingredients. Gluten is found hiding in almost all packaged food.
