I am going to make this fondant recipe for the first time for a wedding cake due this Saturday. My question is can this cake be put into the fridge the night before with this fondant on it with out having any mositure problems. I have pm the lady who posted it but have not heard back from her. I will be driving 3 hours with this cake to my sister wedding.
Any help would be appreciated
Thanks Sue
With whichever fondant you use, if you put it on the cake then put that in the fridge and take it out again, you will get condensation on the outside. Don't touch the cake and it will dry fine, touch it and you'll smudge it and leave finger prints.
to help cut down or eliminate sweating, put the finished cake in a cake box, then put that into a big plastic bag. When you remove it, let it come to room temp before removing the bag or box.
Thanks I'm still not sure if it is a good idea to put it into the fridge. Still thinking about what I will or should do.
Thanks Sue
I make my own fondant and refrigerate cakes with it all the time. Just follow the advice to not touch it when you take it out of the fridge and you'll be fine. I'd take it out of the fridge, put it right into a box, and drive to the wedding. It will travel better cold than room temp, too, less chance of it shifting around if it's chilled.
