I have been unable to find an answer to this question.
I have a 2 tier cake due with perishable fillings. The cake will be covered in traditional buttercream with fondant decorations and 3d gumpaste figures. I know not to refridgerate the gumpaste but I'm not sure about the fondant decorations that will be flat around the cake.
Will it be ok to refridgerate the cake with the fondant decorations than remove it an hour or 2 before adding the gumpaste figures? Or would it be better to refridgerate the cake with just the buttercream and add the decorations an hour or 2 before pickup? I will be using MMF if that makes a difference.
I'd put the decorations on as late as possible - I've found that putting mmf in the refrigerator is unpredictable and often the result is a sticky, streaky mess.
Previous response is correct. Putting fondant onto butter cream starts the softening process, and when you remove it from the refrigerator will not only will the condensation make it worse, you're likely to color transfer that is very unattractive. (This is what happens here in North Carolina, anyway.) Can you put the fondant on last minute, I hope?
Thanks. I can put the decorations on about an hour before pick up and just remove the cake an hour earlier from the fridge.
