Weird thing... Some of our cupcakes are coming out of the oven with what look like sugar scum on the top! First I thought it was uncooked batter but it's not.
When this "sugar scum"dries it looks crusty.
Any ideas what it is / what might be causing it?
Hmm, I get this with white chocolate cupcakes a lot, my guess was maybe it was the humidity around here? I live in Western Washington, so everything gets sticky. My last batch, I added 1/4 c., maybe less, more flour to the dry ingr, and it seemed to do the trick.
