I have a wedding cake for tomorrow to do and i was going to freeze the cake layers over night and then put it together tomorrow but i was wondering if i can fill and ice it all tonight. the only thing is is that the filling is fresh banana and pineapple. Is it okay to freeze the banana and pineapple filling or should i just wait to fill and ice it all tomorrow?

I would wait to do the icing and filling. Fresh fruit and freezing them doesn't do well as a filling. But definitely freeze the uniced cakes, just wrap them in Press N Seal first. icon_smile.gif

I figured that. i always hated cakes with fresh fruit fillings they are way too much work lol

As was said, NO you cannot freeze that fresh fruit filling.
