Okay, I know how to store a cake in the fridge, how to freeze a completed cake and thaw it, but I'm just not sure about one with chocolate. I know that if chocolate gets moisture on it it can turn white and chalky, but I'm making a birthday cake for a friend for Saturday and I'm leaving town Thursday night so I need it to last. I'm planning on a chocolate cake with chocolate ganache filling, chocolate IMBC and finished with chocolate accents (she's turning 30 so she's allowed this much chocolate). Will it work to keep it in the fridge?

Oh, I was also thinking of doing chocolate covered strawberries, but I'm totally willing to adjust my plans if something won't work.

you definitely don't want to make your strawberries ahead of time. They will get juicy and ooze after a very short time. I would also keep the accents out until you get ready to go and put them on last. Just keep them in a cool dry place.
Good luck.
