Does anyone know if a vanilla sponge cake can be covered in fondant? Also, how long can you keep it at room temp and can you freeze it?

Depends on the particular recipe you're using. I know mine can be covered in fondant, kept at room temp (NOT a hot kitchen) good for a week or more if well wrapped, and can be frozen fine. I find the texture is even better after freezing, in fact.
