I am having trouble keeping a dome in a gas oven. After i take them out they deflate when i bake according to the recipe time/temp. I also live in a very humid area. Does anyone know how to dome cupcakes using a gas oven? I tried 400F with the suggested time with no luck. I am thinking 400F with a long time because of the mositure in the air and gas.
I don't know if using a gas oven is the problem; I've baked recipes in both gas and electric with the same results. Start at the same high temp for a nice dome, then after five or ten minutes turn the temp down (to 350 or 375) and bake longer. The cupcakes should be done when you press a finger gently on top and no imprint remains. Good luck.
