How long do you think IMBC will keep in the fridge for....or should it be used straight away?
Can it be frozen?

2-3 weeks in the fridge. 2-3 months in the freezer.
i keep it for weeks and weeks in the refrigerator without any deterioration, but if i were keeping it for customers it would freeze. just be sure to completely defrost before re-beating and add any chocolate BEFORE you freeze. In the past I've had problems with chocolate seizing in previously frozen BC i think due to the moisture content.
