I will be making a 3 tier wedding cake, for the first time, I have had trouble with my stacked cakes being level in the past. I need a good sturdy white cake recipe. Please any suggestios will be greatly appreciated.

The WASC cake in the recipes section is a great cake and very popular. I personally used it for my daughter's wedding this past April and it worked out wonderfully and tasted yummy too! I flavored mine with almond...my daughter's favorite! icon_smile.gif

I definately! vote for the WASC recipe. It's perfect in taste, texture, sturdiness and will bake up a nice, moist, *flat* layer that should not need any leveling icon_smile.gif

You should use a spirit level to make sure your oven racks are level.

You should use a ruler to make sure your cakes are level regardless of which recipe you use.

You must make sure that you cut your dowels all to the same length and square across the ends. No level cake can survive crappy cuts on the dowels. Use a miter box and a dedicated hacksaw (keep one for cake only, another one for sawing car parts).
