I have been asked to make a cake for a friends birthday. When I asked what he wanted, he told me yellow cake with strawberry frosting with fresh strawberries. HELP! I am not a strawberry girl and have no experience making strawberry frosting. Any suggestions? Recipes? Help!!! Thanks so much! By the way....need to make this by Saturday!!

i make raspberry cream cheese icing by boiling down some frozen berries into a sauce and adding it to my regular recipe. I don't see why you can't do this with strawberries and your regular buttercream recipe. You may want to strain your sauce to get rid of the seeds.

i have also just pureed strawberries and added it to swiss meringue buttercream, but i think the flavour is stronger when you boil it down. If you do puree, i would advise using fresh (i used frozen which may have impacted the flavour)
