Was wondering if anyone knows which cutter(s) are used to achieve the pattern on this cake?!

These are made with one size of round cutter.

Take a piece of paper and draw a few rows of circles. Then draw some more circles that overlap by half a circle in each column and row. You will see how you need to cut the fondant when you look at your pattern.

Once you see the layout, it's a snap. All you have to do is perfectly align the half cut offset.
