Fillings For Wedding Cakes

What is the best fillings to use for wedding cakes. I wanted to do a cream cheese filling but don't want to have something that needs to be refridgerated, any suggestions? Can cream cheese fillings be left out?

Her recipe calls for Butavan. Is there a substitute for that?
