So attempting Lemon Merengue cupcakes for the first time...
I had every intention of doing a basic lemon sponge and illing with lemon curd with a merengue swirl on top BUT have seen a pic online where the lemon curd is added as a thin layer on top of the cupcake, with the merengue swirl done on top of the curd layer.
Looks amazing, but am worried the merengue wont grip and slip all over the place....?
Any thoughts/experience of this??
