When you make the cakes with the chocolate on top and running down the sides with the strawberries that look like tuxedos do you use melted chocolate, or Ganache? Have a groom's cake to do and was wondering what do you use for the melted chocolate TIA!!!!

Ive never done it however if i were going to I'd go with ganache. I pretty sure its more stable and will prob taste better.

Typically for strawberries you'd use chocolate and for cake you'd use ganache (or else it will crack apart when the cake is cut). You could still use the 2 different mediums or ganache for both so that they will match. Ganache for the strawberries will be better for eating (I so hate the crumbling chocolate) but will be easier to smudge and harder to handle.
